FHA2014 Culinary Challenge

The fundamentals of the food and beverage industry are the people who have committed valuable time and effort and through their passion to ensure the highest standards are attained. FHA Culinary Challenge (FCC) is the region’s most prestigious international culinary competition dedicated to the promotion of culinary excellence. With strong support from the World Association of Chef Societies and the regional chef associations, it is the ultimate arena for hundreds of budding culinary talents from around the world to display their masterly skills and be accredited by a panel of internationally acclaimed chefs.


Visitors of FHA2014 can catch all the live actions at the open kitchens and marvel at the many creative gourmets on display. Those who wish to savour the dishes prepared by the participating teams from the Gourmet Team Challenge and National Team Challenge can also purchase tickets to the daily lunch services. Tickets will be available for booking 2 months prior to the challenge via the official website of FHA2014 Culinary Challenge.

FCC2014 comprises of the following challenges:

14 classes are available for individual professional chefs to compete in. They include cake dressing, freestyle wedding cake display, pastry showpieces, desserts, plated appetiser, Asian meal, plate dishes, brunch plates, tapas, etc.

This challenge is open to teams from hotels, restaurants, culinary institutions, airlines or catering establishments. Each team will prepare a themed buffet of their choice for 30 diners within the given guidelines. The winning team will be awarded based on criteria such as materials used/mise-en-place, hygiene, presentation/innovation and taste & texture.

Comprising chefs and service personnel, each team will be challenged to deliver the ultimate F&B experience to diners. From table setting to servicing to the quality of food, the challenge places great emphasis on teamwork.

Held only once every four years, this challenge is highly anticipated by many as national culinary teams made up of top chefs in their respective countries battle it out for the Best National Team Award. Thereafter, the top three national teams will then proceed to participate in the Battle for the Lion on the final day of the competition.

The top three national teams who have attained the highest overall score at the National Team Challenge will move on to compete at the Battle for the Lion on 11 April 2014, Friday. Each team will prepare an appetizer, main course and dessert for 50 diners using the ingredients provided in a mystery basket. The winning team will take home the coveted Lion Trophy.
